The Bloom · pour-over

The slow pour

For a V60 or any filter brewer. Fifteen grams, three minutes, nowhere to be.

Rinse and add

Rinse the paper filter with hot water. Add 15g of The Bloom, ground medium-fine.

0:00 – 0:45

Let it bloom

Pour 30g of water at 94°C. Swirl gently, then wait while it breathes.

0:45 – 2:30

Slow circles

Pour the rest in slow, even circles until you reach 250g.

Wait a minute

Let it cool a little. The berry and honey come forward as it does.

The Ember · espresso

The first shot

For the machine. Eighteen grams in, thirty-six out, and a minute to yourself.

Eighteen grams of The Ember, distributed evenly and tamped level.

Pull

36g out in 25 to 30 seconds, with water around 93°C.

Taste

Adjust

Too sharp, go finer. Too bitter, go coarser. It gets better every morning.

Drink it slowly, even if it is only for a minute. Caramel first, then toasted nuts.
